Ramsay Blasts ‘Kitchen Nightmares’ Lawsuit

“Hell’s Kitchen” star Gordon Ramsay broke his silence on a lawsuit accusing the perfectionist chef of faking scenes in a New York eatery for his upcoming Fox reality show.
“I would never-ever-ever dream of setting anything up,” Mr. Ramsay said by phone from London on Friday. “I want to sleep at night. We were issued a writ because, God bless America, if the toilet paper is not thick enough and you come out with a rash on your ass [you’ll get sued].”
In his new show, “Kitchen Nightmares,” Mr. Ramsay visits struggling restaurants and tries to help owners turn around their businesses.
Manhattan restaurant manager Martin Hyde was fired during the filming of a “Nightmares” episode, then filed a $1 million lawsuit in U.S. District Court against Mr. Ramsay and the show’s producers in June. Mr. Hyde accused “Nightmares” of planting spoiled meat, fixing a chair to fall apart and hiring actors to pose as guests lending the appearance of a successful makeover. Earlier this month, a judge tossed the suit into arbitration.
“The idea of bringing moldy food in and planting actors is a f**king joke,” Mr. Ramsay said. “There’s a man who got very scared and very embarrassed about his lack of professionalism. For a man to waste lawyers’ time and taxpayers’ money to get upset about something you’re the cause of…”
The lawsuit said Mr. Hyde urged his boss to invite Mr. Ramsay’s “Nightmares” production to the restaurant, only to be singled out as a scapegoat by producers who needed a camera-ready villain for the show.
“[Mr. Hyde] wasn’t the one in charge of the kitchen,” said Mr. Hyde’s attorney, Carl Person. “The person responsible left the restaurant a week earlier. They’re going to make him appear he was the one in charge and he wasn’t. They’re setting him up.”
The New York lawsuit is similar to an allegation against the popular UK version of “Nightmares,” where a restaurant went out of business after the show revealed rotting food in its kitchen. Mr. Ramsay won a lawsuit against a newspaper that claimed the show was staged.
“I don’t want to start that kind of bullshit over here,” he said. “You know it just scares me that litigation can just happen overnight, and then you’re on the defense.”
A crew member on the U.S. version of “Nightmares” previously told TelevisionWeek that restaurants aided on the show were “so disgusting, we didn’t need to do anything” for them to look bad. The source also said the production does help stock the restaurant with local patrons for some scenes, but “they weren’t told to lie about their experience, only to be entertaining for the camera: ‘If you like the food, then really like it. If you don’t, then really don’t.’”
Both Mr. Ramsay and Mr. Person said the “Nightmares” raw camera footage will vindicate their respective sides of the story.
“We found extraordinary droppings from rats and the most unhygienic kitchen I’ve ever seen in my career,” Mr. Ramsay said. “There should be a government health warning before the program saying ‘all dinner should be consumed before watching this program.’”
Mr. Person acknowledged there may have been sanitation issues at the restaurant, which the lawsuit notes was closed by the New York Board of Health about a week after the episode was shot. “Every restaurant has mouse droppings,” he said. Mr. Person also said Mr. Ramsay “to some extent, may not know what’s going on” behind the scenes of his own show. But Mr. Person maintained much of the production is “showmanship” and that his client was unfairly targeted for humiliation.
Fox premieres “Nightmares” on Sept. 19, the same night as another fall reality series attracting production controversy, CBS’s “Kid Nation.” Though Fox has been silent about the “Nightmares” lawsuit and declined to comment, Mr. Ramsay has never been shy about speaking his mind.
“Trying to say I set up a wobbly chair,” Mr. Ramsay said, his voice full of disgust at the lawsuit. “This is supposed to be the most powerful nation in the world, not the most pathetic.”

Rudeness is just another tool used to get through to people who have impenetrable egos. If he is the most over the top boss you have ever seen, you have lead a really sheltered and coddled life in terms of work experience.

    In terms of the US, we really are the most litigious society in terms of lawsuits being files for every and any inconvenience and perceived slight.

    Gordon’s record speaks for itself. He knows how to run a restaurant and has a long record of showing up at failing establishments and turning them around in a week or less. This is demonstrable on his similar show in the UK.

    DO NOT eat out, folks, unless you have to…these “joints” are all the same; priests, nuns, etc., choose to work elsewhere, and anyone with good hygeine tends to seek jobs/careers that pay better; if the public really knew. Ramsey must be a democrat—they always blame America first…did anybody else notice? Really, now, would anybody with any other talent or money open an eatery? It is tough, dirty work, and requires constant maintainance of all including staffing. The best thing to do with your mom’s chili recipe is burn it rather than try to feed it to another person for profit; been there, done that, and I eat at home, now and forever.

How about the FACT that according to law the federal government can not send in FEMA until the state governor asks for the help? So why didn’t the mayor do something to get the citizens out? Why didn’t the governor put the call into the President before the storm hit? Did they think it was going to stop and not come ashore?   69. I’m an American, and I’ve watched Ramsay’s shows for a few years now. Until you watch him, and get to know his mannerisms, it would be the natural thing to do, to misunderstand his comment.
    He LOVES this country.
    He’s featured our troops in an episode of his show “Hell’s Kitchen”, for two years in a row.
    The comment he made was clearly his opinion regarding how litigious American society is, and has become. The truth is, he’s correct.
    However, some don’t care to admit that.

  73. Ramsey has earned Michelan stars by EARNING them. Nine out of ten resturants anywhere are filthy hell holes. If every potential customer got to walk through them before sitting down there would be no customers left.I owned one and staffing them with even remotely competent people who acutally cared about keeping the kitchen sanitary and serving quality food was virtually impossible. I spent every waking hour scrubbing pots and cleaning floors. If you think Ramsey is a ‘meany’ fu** O**! to quote him. I’d trade one of him for a hundred so-called resturant staff.

  74. Taken in context, Mr. Ramsay was speaking of the US legal system, not the US. Where the legal system is concerned in our country, Mr. Ramsay is correct… pathetic is an excellent description. In our system the courts can be used to threaten, intimidate and bleed money from another person with our without basis. Hopefully we will someday find a way to clean up the mess our lawyer-lawmakers have, so completely, screwed up.

As a professional restaurateur (and I notice the dearth of professional caterers on this blog)I can assure all of you that this is a hard hitting programme which tells it like it is.You don’t get 3 Michelin stars for providing KFC,Taco Bell or Big Mac types of food.Being a good chef is one of the most demanding proffessions around.You won’t cut it being Mr.Nice Guy.Period. Ask any top American chef.Look at the idiots in the audience on Emeril’s show,applauding when he says “add lots of garlic” or “put in lots of cajun spices”,or such like. It is hard enough providing top quality food in the USA when you consider the insipid fruits and vegetables and meats and cheeses,many of which are produced to have eye appeal with only secondary consideration given to the actual taste.Then compare that to a market in Europe with a cornucopia of food available,with taste being the overriding factor.Unfortunately however the American trend is slowly creeping into European markets.

  112. The current American production (Hells’ Kitchen) purposely chooses the “hottest” scenes with Ramsay. The UK version of “Kitchen Nightmares” is a much more complete program.
    Having seen both, I doubt that Ramsay would ever consider faking anything on any of his shows. He’s a perfectionist, whose entire goal is to improve the industry. He’s also a very intelligent individual, who I’m sure understands the downside of ever knowingly allowing anyone associated with his productions to fabricate anything.
    Besides that, his comments about Americans being way too quick to sue are 100% accurate.

But I think you have it backwards. Politics does not drive or dictate Christian behavior. Christian behavior comes from developing a relationship with Jesus and God.

The more complacent we are about it (ie., the Clinton years) the more success they will have.

I personally don’t enjoy Gordon Ramsay’s show and I don’t think I could tolerate his presence for extended periods of time; but I do respect the man, and I don’t think he would have staged anything or perpetuated a lie. Yes, he’s absolutely the most rude individual that I’ve seen to-date on TV–ever. However, the man is serious, serious, serious about his craft; and I do respect the fact that he takes crap restaurants (he’s taken several) and tries to get them in top-shape running order and turning a profit. I think he has to be brusque in order to reach some of the thick-headed people he deals with at these places. I wouldn’t feel safe eating at any of the establishments I’ve seen on his show until he’s done with them.     What is it with — seemingly — every person working in a restaurant — be they server, cook, host/hostess, whatever — having to be a smoker?
    Do these restaurants not get how repulsive that is to those diners who choose not to do something as gross and ugly as smoke?
    It looks nasty. It smells nasty. It IS nasty.
    I can’t tell you how many times my friends and I have prepared to dine somewhere, and then just turn right around in the parking lot and leave (taking our dollars with us) because we see — as usual — a cluster of restaurant staff hanging around the back of the building, sucking desperately on their cigarettes.
    And it’s, like, soooo many. It really feels like the vast majority of restaurant employees smoke.
    What is it with that? How do you restaurant owners, managers, staff, etc. not get it? It’s DISGUSTING! It makes me and my friends not want to give you our money.

But anyone who doesn’t know that and invites him into their kitchen for help, especially on a reality TV show, is an idiot. In Hell’s Kitchen, Ramsey’s Kitchen Nightmares in the UK and every other show I’ve seen him on he is consistantly the same person. And there are times when he does tone it down and watch his language but they are not in the kitchen. He takes being a chef and running a restaurant very seriously and I have to wonder what the american restaurant scene would look like if more chefs did.   221. I am an Executive Chef who worked under many European chefs along the way. Gordon is not unlike any of those I have encountered. I tolerated it well and it did drive me towards excellence. Once the chef knew I was aware of the tactic and high enough on the chain of command so to speak, he might crack a smile at me after reacting loudly to a screw-up.
    The rude behavior Gordon displays towards those under him is in my world, a thing of the past. If I displayed such arrogance and aggression I would be looking for other work. There are better ways of coaching others and I believe his mannerisms are all show business. Bringing out the best in others, on a more professional level, is not something others might find all that entertaining.

  250. I had never seen Gordon Ramsay’s TV shows before seeing this story linked from Drudgereport.com. This story was interesting to me, so I watched several clips of both the UK and US versions.
    Without benefit of reading the full text of the lawsuit, yet after reading several other media reports about this suit, it does seem to me that Martin Hyde is an a$$hat.
    Whatever one may think about Ramsay’s attitude, I believe he is truthful– one really does NOT need to “set up” any restaurant in order to witness or “catch” these foul happenings on camera.
    I am a fan of Chef Anthony Bourdain (long before his TV shows)and I think perhaps other commenters here might be, too? Bourdain wrote an excellent book titled “Kitchen Confidential” in which he wrote about unsanitary/dangerous kitchen practices (yet didn’t dwell on them– the book is not about that topic, but his Chef experiences as a whole).
    Also, any “foodie” who’s been using the ‘net for more than 6 years has likely visited the website thestainedapron.com and read some of the stories and experiences posted there by food service workers, chefs and servers… etc.
    This information concerning improper food handling has been out on the internet for at least a decade; it is only recently that Gordon Ramsay brought it to the TV-watching masses in the UK, and now the USA.
    Ramsay’s comment about this nation [not supposed to be] “the most pathetic” is being taken out of context, in my opinion. I see Hyde’s lawsuit as a knee-jerk, face-saving ploy after he was caught with his pants down. And it is pathetic.

He has been known to exhibit a “dearth of inspiration” and culinary “tentativeness and bad decisions” as reviewers of some of his restaurants have noted. My nephew went to school at the Culinary Institute of America in New York and learned the correct way to prepare food. After school a number of restaurants wanted him to work for them. He went to one 5 star restaurant and left after he watched a cook pick up a steak off the floor and serve it. He tried to work at other restaurants but they were filthy. He now works at a place that values good clean working conditions, great food and does not accept excuses for any devation.

But the judicial system here in the USA is indeed a bloated, corrupt, disgrace — a mockery of Justice that allows lawyers to rob individuals and businesses blind. Many lawyers are no better than armed thugs — the only difference is that lawyers use a briefcase, legal loopholes, and gullible juries instead of a loaded gun. You can get sued in this country if you look at someone the wrong way; they’ll just cry “emotional distress” or whatever other phrase-of-the-day is testing well with juries, and they have a good chance of cleaning up at the expense of some poor innocent slob. Too many people and businesses have been raked over the coals and literally ruined in just such a manner. It’s one of the many problems that is eating away at this once-great nation. Wake up, kiddies, this country is less than 250 years old, it’s a far cry from “tried and true” and we are experiencing breakdowns and corruption in all sectors: cultural, economic, legal, and political.
    As for this particular suit, I thought the last season of Hell’s Kitchen was rigged to fill out the, ahem, diversity requirements; for that reason I will no longer be tuning in. So, I am not particularly on Ramsay’s side where “reality-show integrity” is concerned. But there is nevertheless a valid point about this country and its incessant stream of lawsuits.

I lived in NYC for 14 months in a loft apt. above restaurant row and I agree most of those places had some mouse/bug problems. These buildings have been around for 50 years or more and were not designed for restaurant use. They are not secure as far as being tight enough to keep the little animals out. The delivery doors are always being opened and closed. Some of the critters are actually carried in by the delivery people with the little things hiding in boxes of merchandise. One of the main problems is the dirty laundry, greasy towels and rags, tapletops and napkins smelling and attraching the mice and bugs. The garbage that is bagged but left out in the open doesn’t help matters either. Also a lack of enough inspectors and some of the working inpectors being on the take.

    In this instance a cook was responsible for making several people quite ill. The cook, as well as the patrons ended up in the Emergency Room! These patrons trusted this restauranteur to serve them good, wholesome food. He failed in doing so. All employees of any restaurant should have compulsory complete physical examinations prior to being hired and periodically thereafter.
    Have you ever had a case of food poisoning? I have, three times. It wasn’t a barrel of fun. I was sick as a dog. When I eat out, I want to be able to eat properly cooked food, served in a clean environment, be it simple or elegant. After all, I am paying the bill!
    To: Chef Ramsey: Thank you for waking people up to the possibility of acquiring food poisoning from a filthy kitchen. Roaches, rat, and mouse excrement are not part of the meal!
    There may be some Inspectors on the take, but a little reporting to the management as well as the City would do a lot in cleaning up these pigstys.

    I used to think Ramsay was a bit harsh but when I saw his uk nightmare series, then I started to understand why he is so hard (the conditions of some of the restaurants were disgusting, & the staff were usually clueless). If you never been exposed to good cooking &/or training then your probably going to have low standards from the get go. There is a method to his madness, & it makes for interesting TV.
    The way he breaks people’s bad cooking habits and replaces them with good ones reminds me of a drill sergeant. He replaces inefficiency with order & discipline. If people would just follow his advice they would succeed by providing good food & service to repeat customers.
    I like him now and its even gotten me thinking to pull out one of his recipes and cook a special meal for the family.
    He’s alright in my book.

  354. I know I’m a month late on this blog, but this episode was just shown in Hawaii. JMJ – This episode seems to have hit a very strong nerve on both sides. I don’t think that Chef Ramsay meant any of his comments to pertain derogatively to the people of the United States as a whole (by the way, “America” and “Americans” pertains to more than just the citizens of the United States). Don’t we all misstate things every so often? All in all, the show was entertaining. Isn’t that what TV is supposed to do? The fact that he did some good for the restaurant is, as we say in my family, “gravy.” Mr. Hyde was manager. He was in charge. He was in charge for a couple of weeks. It only takes me one or two seconds to see bugs and/or smell mold in my kitchen. I guess he should apply for compensation under the ADA because he has a disability by not being able to see what’s in front of his eyes or smell what’s under his nose. Grow up people. Sometimes we have to take responsibility for our actions or inactions. We also have to lighten up. Not everyone can be, or be required to be, politically correct all the time. Where has this country’s sense of humor gone? Oh, by the way, I am a conservative Republican so, David (8/28/07, 6:11 a.m.), have at it.     Next time you see a pest control truck outside of your favorite eatery… Dont freak out thinking their is a problem in the place! Be GLAD that the management has taken the time to insure your food is being prepared in clean and pest free environment.
    IMHO…The roach problem and the rat droppings filmed for that episode were real and could not be faked to that level.

To those of you who are attacking Gordon Ramsay, personally I don’t think he’s that bad of guy. I don’t really like his excessive swearing either, but the guy wants to see restaurants succeed, and he’s not shy about telling them the realities of running a restaurant. It’s not easy, and it’s not for the out of touch or lazy. I don’t believe Dillon’s was staged, that place was absolutely disgusting. No wonder-that lazy bum Martin was just sitting on his arse all day long talking nonstop on his cell phone. The accusations Gordon made of him sucking off Mohammed were 100% true.
    He did nothing to manage that place. He always tries to blame others-notice that? The owner of the place seems to have put too much trust in Martin, he was so thoroughly out of touch with what was going on in his establishment that he would have had to shut the place down if Gordon wouldn’t have educated him and his staff on running a restaurant. Getting rid of Martin and hiring Vikas Khanna was the best decision Mohammed made as far as I saw. Would I like to eat at Purnima now? You bet I would. From what I see it looks like they have some really nice, exotic Indian cuisine that’s very appetizing. But unfortunately, this old trucker lives too far from NYC to visit Purnima. But if I ever visit NYC I will eat at Purnima.

    Gordon Ramsay, (who is Scottish, not English, BTW, is a very professional and talented chef who is not only making an entertaining program (and the money from it), but who is also spending his time trying to do these restauranteurs who are in trouble a favor. I would like the producers of the program to actually tell us who the person/persons are from these eateries who call their offices and ask them to come and help; at least that way we would know (pre-lawsuit!) which moron called for help and advice and refused to take any!
    Chef Ramsay is not known for mincing his words, and I don’t blame him for his comment above. It is absurd for a business to call in for help, fully knowing that what transpires will be televised, and then “pretend” that the producers hauled in rat droppings, rotten food, and the bad attitudes of the staff!
    If memory serves, Chef Ramsay has been sued in the UK as well by a restaurant that was televised on the BBC there, and the woman who owned the place refused to take a leadership role in her own establishment, ignoring totally the advise that Chef gave her. She also based her lawsuit on “sour grapes”.
    If you are a PC person and don’t care for Ramsay, please don’t watch the show; this is why you have a remote control. For the more honest amongst us, he is a genuine genius and a master at resolving the problems, business, personal, and culinary, of drowing concerns.
    If you truly believe that Chef Ramsay and his staff have to fabricate kitchen nightmares, I challenge you to take the time to ask your waiter next time you go out to eat if you can see the kitchen!

  368. Chef Ramsey is world famous. Anyone who knows anything about him would know when he speaks you should listen. No one is perfect, but regardless if you like his personality, he is successful and he is good. Also I’ve seen all his shows in BBC and in the US and I think if you watch them you’ll see a fair and straight forward side to him. One thing for sure he’s honest. He pulls no punches and he gets right to the point. You can’t grow as a person in any area of your life unless you are pushed, shoved even, with honesty to wake you up and let you know there is always, I mean always, room to improve. Check out his website, read the awards, books, and on and on I could go. Of course he’s made mistakes, will make mistakes…no one is perfect but we need more people like this that will step up and state the truth. He owes these chefs (Hell’s Kitchen) and these establishments (Kitchen Nightmares) nothing, he owes them nothing… yet he helps them at least get the chance to listen to sound advice and learn from Chef Ramsey’s own mistakes and turn their business around and make a profit. Who doesn’t want that in any kind of business. Before you get all defensive, make sure you know what your talking about before you start blasting off. You might find that your own anger and Gordon Ramsey is your knowledge that he’s hit a button, a nerve, in your own life, in your own kitchen. And although I did not run the kitchen, those boys back in the kitchen cleaned every single day as if the health department were going to drop in at any second. Needless to say the kitchen was eF’ing spotless and nothing was ever rotting in the corner in the fridge! I knew this because I was the one who had to tour the health dept. around the restaurant, the bar, & the kitchen when they came in. If they saw anything wrong they would give you a chance to fix it (a warning), LETS SAY ONE WEEK. After that they would just show up to see if the problem was fixed. My point is there is no excuse for such filth. I’m sure they were warned. Had I been in Chefs’ position I would have thrown not only Martin but the entire kitchen crew out on there asses!!!!

  382. Ramsey was spot on and martin behaved like he was on drugs. There were three managers and from a profit standpoint he was unneeded and added no value. But the roaches and rats I was surprisd Gordon didn’t call the police and health code inspector right then. GR commented on another show he wasn’t just shocked by the rotten food and basement conditions, but that they knew he was coming and he was scared to think about what the place looked like before it was “cleaned up”.
    GR took that the whole joint to the back of his kitchen 2 blocks down, it was mouseless and droppingless and roachless, and also the British lady was warned too. GR fixed the problems, then GR visited back and she had let it go. It wasn’t GR’s fault she employed some 23 year old snot while she tended bar.

I for one have worked in the restaurant business for years and even though I would like to think myself well accomplished, I would give anything to have one of the most respected and successful chefs ever evaluate my establishment. Forgetting for a moment that his food is amazing, and that his menus are innovatively fresh and delightful, he operates some of the most lucrative restaurants in the world. I watch this show (both the US and UK versions) and it never fails; some pompous owner of a failing restaurant, arguing that “everything is fine” and “this menu works well”, well obviously not or you wouldn’t have called the show for help! I for one love the way Chef Ramsay is firing back at this lawsuit and the idiot bringing it.

  392. I have watched both the UK and American versions of “Hell’s Kitchen”, and before saying anything else I should probably mention that I am of neither nationality (i like to think that makes me non-biased).
    Ramsay is harsh and crude because it is the only way to assert power and influence in such an enigmatic industry. Can you imagine him saying; “Please would you be so kind as to listen to what i am saying, and be respectful by allowing me to finish my point without being interrupting all the time?” And actually getting anywhere with it? Being from a conservative background i must admit that at first i was stunned by his language and mannor. I soon adapted and, although i do not approve of such language, as it seems to be a part of everyday life that one cannot avoid i mentally block it out.
    To attack someone personally because they expresed their beliefs (and to take what they said out of context) i find to be very rude, especially because i thought Americans encouraged the right to free speach. I have seen so many people mouthing-off in here, both Americans and Brits, that i am astonished. If an American or a Brit made a comment about their own country and were criticised about it they would be livid. Personal attacks solve nothing, they just create unnecesary hatred.
    As for Gordon Ramsay, perhaps he should have been more careful about his wording and making his point clear. However, he is a skilled chef who has consistently worked hard for the good of other people as well as himself. I will continue to watch his show. In my view he is a legendary chef and deserves praise where praise is due. Remember, behind that celebrity exterior beats a normal human heart. Ramsay can be hurt and humbled just as he can be filled with pride and happiness.

  403. What’s disgusting to me is that so many folks are angry at Ramsay rather than being outraged and focusing on what was found in that filthy restaurant. The truth is, most NYC restaurants have filthy kitchens,but most people choose to close their eyes to that figuring all must be OK otherwise people wouldn’t go there.
    Ramsay is hard to listen to sometimes, but I was glad to see the brutal truth being shown.
